Bijen grew up in India spending hours in the kitchen with his mother and grandmother — learning traditional recipes, techniques, and the patience that great cooking demands. Kaku brought her own deep passion for food, honing her skills while raising their family. Their shared love of Indian flavours became the foundation of everything The Indian Lab is today.
What started as cooking for friends and family in their Spotswood, New Jersey home — sharing dishes from different regions of India — quickly grew a reputation for flavours that felt genuinely homemade. They saw a gap: authentic, freshly blended Indian spices were simply not available. So they decided to share what they had always made at home.
